M Bakery


If only I didn't love sweets and desserts. But I do.

So I made the journey to BGC, the soulless land, to try out M Bakery's pastries and cakes. I failed to expect that a queue would exist but there was; thankfully I stocked up on lots of patience while I waited on a humid afternoon weekend.

After waiting for about 30 - 45 minutes I finally got in and bought several desserts which caught my fancy.


Chocolate banana pudding

Of course I had to try their bestseller, despite me Not Liking Bananas In Desserts. They offer two versions: plain banana pudding and the chocolate one. No brainer: chocolate it is.

This pudding had a silky smooth, medium-dense pudding which covered an extremely moist, chocolatey base. I didn't expect that. It hardly tasted like banana (which I imagine banana puddings are), but despite tasting like a run-of-the-mill pudding, I couldn't take my mind off of the idea that I'm eating something with banana in it. I ended up giving it to someone else.

Apple crumble


I'm not fond of apple crumble so any apple crumble that impresses me is extremely delicious. And M Bakery's version did just that. The crumble was crisp and sweet without being cloying. The apples were cut into thin squares and provided a good balance of sugar and cinnamon. The apple flavor is there (from the apple slices), but that's not something I actively look for in this dessert.

Flourless chocolate (mini) cake


This was a disappointment. Was this vegan? I don't know; I didn't ask. I was expecting something similar to Wildflour's deflated version of a souffle (I don't mean to belittle; I like their souffle) but it was surprisingly dry despite looking like it's moist inside? I don't get it. The confectioner's sugar adds nothing to it. Or if it did, it could hardly save this dessert.

This is a good and reliable chocolate cake. Nothing outstanding in my opinion, but something that appeals to a wide audience (read: sometimes boring). It's chocolatey without going overboard. It's not overbearingly sweet either. What stood out is the moist, chocolatey yet light (almost airy) cake base. How the heck did that happen?! Sorcery.

Caramel pecan cheesecake


I had four options for the cheesecake: plain (nah), calamansi (I'm not too fond if it's too sour, and didn't want to risk it), red velvet, and this. This was the most appealing to me.

The NY style cheesecake is almost fluffy as you run your fork (or teaspoon, like me) through it. The pecans give a nice texture to contrast the rich, creamy cheesecake, but so does the graham crust base. The caramel is okay. I personally prefer fruits in my cheesecake (raspberry is the best). I'd give this 3.5.

Vanilla buttercream vanilla cupcake


The cupcake base is surprisingly light, its texture and weight is reminiscent of a popular bakeshop's mamon. The vanilla buttercream frosting is smooth enough to not feel as grainy as Sonja's (I still like Sonja's though). I think this was the bite that confirmed M Bakery wasn't a fluke in my standards.

Oreo crumbles with whipped cream/merengue chocolate cupcake


The name isn't exactly what was written on M Bakery but it'll suffice. This was a chocolate cupcake base with marshmallow whip and crumbled oreos. The whip is what stood out for me here. I can imagine downing three of these in one sitting.

Red velvet cupcake with cheesecake frosting


I think I'm starting to finally understand why Magnolia bakery is popular (and why lots of Americans devour these cupcakes with abandon). The cupcake base has a distinct red velvet flavor (which is...  the usual) but not too sweet and not too dense either. M Bakery ensures that every bite is flavorful but nothing too heavy on the stomach. The cream cheese is the richest I've ever tasted yet, without being too heavy as well. They've meticulously ensured that it's not heavy on the tummy (but I'm guessing those calories are massive.) I bet this is how people got fat over cupcakes. If you find Sonja's red velvet a tad too sweet, this is right up your alley.

Devil's food cake chocolate cupcake


You might think this is the same as the cake slice a few photos above. I think not, because M Bakery offers a chocolate buttercream chocolate cupcake flavor which is the exact name they called the cake slice, only it's a cake and not a cupcake. ANYWAY. This one has a more intense chocolate flavor than the chocolate cake (and I surmise its corresponding cupcake form). I like the subtle bitterness of the cocoa in the cupcake. A must for chocolate lovers.

Overall, it's a pretty good dessert spot. They churn out good desserts as long as you navigate from the terrible ones.

I had a massive stomachache when I ate M Bakery's products. Even my companion whom I shared these desserts had a stomachache as well. I had a stomachache for literally three days--the exact three days I decided to consume all of the desserts I bought (even though I was crying inside).

We're not super lactose intolerant; we regularly gorge on dairy-based food products. Was there something in the ingredients that made our weak tummies sensitive to the food? I don't know. I feel so bad because I want to buy from there again, but good heavens I don't want to go through hell again.

Nevertheless, the food is delicious. I'm just not returning for a very long time.
